BANANA CREAM PIE SUPREME

(Grandma Cooper’s recipe)

6 tbsp. Flour
2/3 cups sugar
¼ tsp. Salt
1-3/4 cups milk
2 egg yolks, slightly beaten
1-1/4 tsp. Vanilla
1 cup whipping cream, whipped
3 large bananas
1 baked pie shell

Mix flour, sugar and salt in top of double boiler.    Add milk and cook over hot water, stirring constantly, until mixture thickens.
Cook 15 minutes longer, stirring occasionally.
 

Pour small amount over egg yolks, beating vigorously,  return to double boiler and cook 2 minutes longer,  stirring constantly.
Remove from fire, cool.   Add vanilla.  Chill.   Fold in half of the whipped cream.  Arrange cream filling and sliced bananas in layers in the pie shell. Ending with the filling.  Top with the other half of the whipped cream and garnish with sliced rounds of banana, if desired.
