FRIED GREEN TOMATOES

This is a recipe for "Mississippi Style" fried green tomatoes which were supposed to be a favorite of Elvis Presley's, served along with squirrel hunted by his father and which were supposedly used by the famous Whistle Stop Cafe in the movie, "Fried Green Tomatoes".

Hints on preparing fried green tomatoes

1)  To keep the cooked tomatoes from getting soggy before
 they are served, stand them on edge in the serving dish
instead of stacking them.

2)  Don't crowd the slices when frying, keep them in a single
 layer with lots of space between the slices.

3)  Keep the fat or oil the slices are fried in hot at all
times to prevent the tomatoes from absorbing the fat.


Whistle Stop Cafe's Fried Green Tomatoes

1 egg, beaten
1 cup buttermilk
1 cup self-rising flour
1/2 cup cornmeal
1/2 teaspoon salt
6 to 8 green tomatoes, cut into 1/4 inch thick slices
Bacon drippings, vegetable oil or a mixture of both

MILK GRAVY ( See next recipe)


Mix egg and buttermilk in a shallow dish.

Mix together flour, cornmeal and salt in a shallow dish.
 Working in batches, dip tomato slices into egg mixture, allow excess to drip back into the dish.

Coat slices with flour mixture.

Fry slices in hot (375 degrees) bacon drippings in a large heavy skillet until browned on both sides,  turning once with tongs.

Can be served plain or with milk gravy.



MILK GRAVY

Measure bacon drippings left in skillet after frying
tomatoes; return to skillet.

For each tablespoon of drippings stir in

1 tablespoon of flour until mixture is smooth.

  Cook over low heat for 1 minute, stirring constantly.
  For each tablespoon of flour used, stir in 1 cup of milk,
 1/2 teaspoon salt and 1/4 teaspoon of pepper
 until smooth.    Cook until thickened, stirring constantly;
 pour over fried green tomato slices.
