eggs
1/4 cup water
1/4 tsp Italian seasoning

tbls parmesan cheese
dash black pepper

small zucchini, cubed

small onion, diced
1/4 green pepper, diced

mushrooms, diced
1/3 cup cheddar cheese, finely grated
1/4 cup mozzarella cheese, finely grated
(These are the veggies I usually use, but they
are optional, use what you like) Combine
cheddar and mozzarella cheeses and set aside.
Set aside.
In a med non stick fry pan, over med heat,
sauté veggies in butter or margarine until
crisp tender, about 5 minutes. Remove
from pan.
Beat eggs, water, Italian seasoning,
parmesan cheese and pepper well.
Reduce heat and add a bit more butter or
margarine to pan.
Add egg mixture, rolling around until pan is
coated. Move egg mixture away from edges and
center, continue turning pan so it remains
coated.
Add veggie mixture and half the cheese
mixture, fold omelet (if it comes apart,
that's ok, folding takes practice. but it's
still good!) turn off heat, add remaining
cheese and cover for a few minutes.
Slide on to plate. salt to taste
if desired.
