SWEET AND SOUR CHICKEN

6-8 boneless, skinless chicken breasts cut into strips
1 can pineapple chunks
1 large bottle of spicy French salad dressing
Salt and pepper to taste
Olive Oil
3 cups white rice

In large frying pan, brown chicken strips in small amount of oil, no more than 1/4" deep.  Pour in pineapple, including juice and dressing over the top of the browned chicken.

Simmer 20 - 30 minutes (check for tenderness of chicken).  Serve over bed of cooked rice.  Top with a dash of soy sauce.
