TACO PIE

  • 1 pound ground beef
    ½ cup chopped onion

    1 small package taco mix

    1 ¼ cups milk

    ¾ cup Bisquick

    3 eggs

    2 tomatoes, sliced

    1 cup Monterey Jack or Cheddar cheese

Heat oven to 400 degrees Fahrenheit.  Grease a 10-inch pie plate.  Cook and stir beef and onion over medium heat until no longer pink.  Drain fat.  Stir in seasoning mix.  Spread in pie plate; sprinkle with chiles.  Place in blender or mix by hand: milk, baking mix and eggs until smooth.  Pour into pie plate.  Bake for 25 minutes. Top with sliced or diced tomatoes; sprinkle with cheese. Bake until knife inserted in middle comes out clean, usually 8-10 minutes.  Cool for 5 minutes before serving.  Can be served with sour cream.
